做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡(pào ),生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅(guō )盖大火煮开后(hòu )转中火。煮(zhǔ )到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖(mèn )。
