做(zuò )法(fǎ ):春笋切(qiē )成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
