做法:洗净(jìng )宰(zǎi )好鲫(jì )鱼,洗净淮山和(hé )薏(yì )米。用(yòng )清水把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜块在锅上擦一遍,放两勺油(yóu ),待油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放入煎(jiān )煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下(xià )盐调味即可品尝。
