做(zuò )法:春笋切(qiē )成片后加少许盐捞出后用(yòng )清水浸泡(pào ),生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
