做法:洗净宰好鲫鱼,洗(xǐ )净淮山和薏米(mǐ )。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块在锅上擦一遍,放两勺(sháo )油,待油六成(chéng )热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里的清(qīng )水,放入煎煮好的鲫鱼和其他材料,武火煮沸(fèi ),转中(zhōng )小(xiǎo )火煲(bāo )一个(gè )半小(xiǎo )时,下盐调味即可品尝。
