做法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生(shēng )抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
