做法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂一小块(kuài )姜,热锅(guō ),用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦煲里(lǐ )的清水,放(fàng )入煎煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转中小火煲(bāo )一个(gè )半(bàn )小时,下盐调(diào )味即(jí )可品尝。 -
