做法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春(chūn )笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁时盖上(shàng )锅(guō )盖焖。
