做法:春笋切成片后(hòu )加少(shǎo )许盐捞出(chū )后(hòu )用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半(bàn )掩(yǎn )住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬(áo )干的时候加(jiā )入(rù )盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
