做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用(yòng )清水(shuǐ )浸泡(pào ),生(shēng )姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩(yǎn )住(zhù )春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
