做(zuò )法:洗净宰(zǎi )好鲫鱼,洗净淮山和(hé )薏(yì )米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦(cā )一遍,放两勺(sháo )油,待油六成(chéng )热(rè )下鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材料,武(wǔ )火煮沸,转中小火煲一个半小时,下(xià )盐调(diào )味即可品尝。
