做法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用(yòng )清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
