做(zuò )法:春笋切成片后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖(gài )大(dà )火煮开后转中火。煮(zhǔ )到水快熬(áo )干的时候(hòu )加入盐,翻(fān )炒均(jun1 )匀稍收汁时盖(gài )上锅(guō )盖(gài )焖。
