做法:洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏米。用清水把陈(chén )皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油六成热(rè )下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼(yú )和其他材料,武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个半小(xiǎo )时,下盐调味即可品尝。
