做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
