做法:春笋切成片后加少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬干的时(shí )候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收(shōu )汁时盖上锅盖焖。
