做法:春(chūn )笋切成片后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖(gài )上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍(shāo )收汁时(shí )盖(gài )上锅盖焖。
