做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出后用(yòng )清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
