做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干(gàn )的时(shí )候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
