做法(fǎ ):春笋切(qiē )成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖焖。
