做法:春(chūn )笋切成(chéng )片后加(jiā )少许盐捞出后用清水浸泡(pào ),生(shēng )姜(jiāng )切片,葱切(qiē )成段。锅(guō )烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
