做法:洗(xǐ )净(jìng )宰(zǎi )好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮(pí )泡软,拍裂(liè )一小块姜,热锅,用姜(jiāng )块在锅上擦(cā )一遍,放两勺油,待(dài )油六成热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲里的清水,放(fàng )入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中小(xiǎo )火煲一个(gè )半小时,下盐调味即可品(pǐn )尝。
