做(zuò )法:洗净(jìng )宰好鲫鱼,洗(xǐ )净淮(huái )山(shān )和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅(guō )上擦一遍,放两勺油,待油六成热下鱼(yú ),煎至微黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好的鲫鱼和其(qí )他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品(pǐn )尝(cháng )。
