做(zuò )法:洗净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一遍,放两(liǎng )勺油,待(dài )油六成(chéng )热(rè )下(xià )鱼,煎至微黄。煮沸瓦煲里的清水(shuǐ ),放入煎煮好的鲫(jì )鱼(yú )和其(qí )他材料,武火煮沸,转中小(xiǎo )火煲一个半(bàn )小时,下(xià )盐调味即可品(pǐn )尝。 -
