做(zuò )法:春笋(sǔn )切成(chéng )片后加少许盐(yán )捞出(chū )后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上(shàng )锅盖(gài )大(dà )火煮开后转(zhuǎn )中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上(shàng )锅盖焖。
