做法:洗净宰好鲫鱼,洗净(jìng )淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上(shàng )擦一(yī )遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮(zhǔ )沸瓦(wǎ )煲里的清水,放入(rù )煎煮(zhǔ )好的鲫鱼和其他(tā )材(cái )料,武火煮沸,转中小火(huǒ )煲一个半小(xiǎo )时,下盐(yán )调(diào )味即可(kě )品尝。
