做法:洗净(jìng )宰好鲫鱼,洗净淮(huái )山(shān )和薏米。用清水把(bǎ )陈皮(pí )泡软,拍裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两勺(sháo )油,待油六成热(rè )下鱼,煎至微(wēi )黄。煮沸瓦煲里的清水(shuǐ ),放入(rù )煎煮好的鲫鱼和其他材料,武火煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下盐(yán )调味即可品尝。
