做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后(hòu )用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少(shǎo )量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
