做法:春(chūn )笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩住(zhù )春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水快熬干(gàn )的(de )时(shí )候加(jiā )入(rù )盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
