做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用清(qīng )水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水半掩住春笋(sǔn ),盖上锅盖(gài )大火煮(zhǔ )开后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
