做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山和薏米。用清水把陈皮泡软,拍裂一小(xiǎo )块姜,热(rè )锅(guō ),用姜块在锅上(shàng )擦一遍,放(fàng )两勺油,待油六成热下鱼,煎(jiān )至(zhì )微黄。煮沸瓦煲(bāo )里的清水,放(fàng )入煎煮好的鲫鱼(yú )和其他(tā )材(cái )料(liào ),武火煮沸,转中小火(huǒ )煲一个半小时,下盐调味(wèi )即可品尝。
