做法:洗净宰好鲫鱼,洗(xǐ )净(jìng )淮(huái )山和薏米。用清(qīng )水把陈皮泡软(ruǎn ),拍裂一(yī )小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺(sháo )油,待油六(liù )成热下鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼和其(qí )他材料,武火(huǒ )煮沸,转中小火煲一(yī )个半小(xiǎo )时,下盐调味(wèi )即可品(pǐn )尝。
