做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软(ruǎn ),拍裂(liè )一小块姜,热(rè )锅,用(yòng )姜块在锅上擦一遍(biàn ),放两勺(sháo )油,待(dài )油(yóu )六成热下鱼(yú ),煎至微黄(huáng )。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼和其他材料(liào ),武火煮沸,转中小火煲一个半小时,下盐调味(wèi )即可品尝。
