做法:洗净宰好(hǎo )鲫鱼,洗净淮山和薏米。用清(qīng )水把陈皮泡软,拍裂一小块姜(jiāng ),热(rè )锅(guō ),用姜块在锅上擦(cā )一遍,放两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水,放入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和(hé )其(qí )他材料,武火煮沸,转中小火煲一个半小时,下(xià )盐(yán )调味即(jí )可品尝(cháng )。
