做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅,用姜块在锅上擦(cā )一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸瓦煲里的(de )清水,放入(rù )煎煮好的鲫(jì )鱼和(hé )其他材料,武火煮沸,转(zhuǎn )中(zhōng )小(xiǎo )火煲一个半(bàn )小时,下盐调味即可品尝。
