做法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把陈(chén )皮泡软,拍裂一小块姜(jiāng ),热锅,用姜块在锅(guō )上擦一遍,放两勺(sháo )油,待油六(liù )成热下(xià )鱼,煎(jiān )至微(wēi )黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼(yú )和其(qí )他材(cái )料,武火煮沸,转中小火煲一个半小时,下盐调味即可品尝。
