做法:春笋切成片后加少许盐(yán )捞出(chū )后用清(qīng )水浸泡(pào ),生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干(gàn )的时候加入(rù )盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
