做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段(duàn )翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上锅盖焖。
