做法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅(guō )盖焖。
