做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右(yòu )。再(zài )加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上锅(guō )盖大(dà )火煮开后转中火。煮到水快熬干(gàn )的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁时盖上锅盖(gài )焖。
