做法:春笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡(pào ),生姜切(qiē )片,葱切(qiē )成(chéng )段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收(shōu )汁时盖上锅盖焖。
