做(zuò )法:春笋切(qiē )成片后加少(shǎo )许盐(yán )捞出后用清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入(rù )少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
