做法:春笋切成片后加(jiā )少许盐捞出(chū )后(hòu )用清(qīng )水浸泡,生姜切片,葱(cōng )切成段(duàn )。锅(guō )烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
