做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐(yán ),翻(fān )炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
