做法:春笋切成片(piàn )后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉(ròu )片、葱(cōng )段翻炒1分钟左右。再(zài )加入生抽、老(lǎo )抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
