做法:春笋切(qiē )成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成(chéng )段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩(yǎn )住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
