做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生(shēng )姜切片,葱(cōng )切成(chéng )段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入(rù )生(shēng )抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候(hòu )加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
