做法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和(hé )薏米(mǐ )。用清水把陈皮泡(pào )软,拍裂一小块姜,热锅(guō ),用(yòng )姜块在锅上擦一(yī )遍,放两勺油,待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫(jì )鱼和(hé )其他材(cái )料,武火煮沸,转中(zhōng )小火煲一个半小时(shí ),下盐调味即可品尝(cháng )。
