做法:春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片(piàn ),葱(cōng )切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐(yán ),翻炒(chǎo )均(jun1 )匀(yún )稍收(shōu )汁时盖上锅盖焖。
