做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽(chōu )、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后转中火(huǒ )。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖(gài )上锅(guō )盖焖。
